Taco Soup

A beautiful and tasty soup for the winter months...

1 lb. lean ground beef
1 can green chilies
1 tsp. salt
1 pkg. Ranch dressing mix
1 chopped onion
1 pkg. Taco seasoning
1/4 tsp. pepper
1 can Rotel, undrained
1 can corn, undrained
1 can black beans, undrained
1 can pinto beans, undrained

-Brown meat with onion and chilies. Add all other ingredients. Simmer.
-Garnish with cheese, chips and sour cream. Ole!

This is one of our quick favorites, the entire thing takes less than 15 minutes to make! I add chedder cheese on top and let it melt as everything is heating up, then we scoop it on to frito chips, very yummy and if you don't overindulge its not even that bad for you! With the cheese and the chips one serving for weight watchers is only 8 points and its well worth it, without the cheese or chips its only 4 points!
