Sour Cream Banana Bread

1 cup mashed bananas
1 cup sour cream
1/4 cup margarine
1 1/3 cup white sugar
2 eggs
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

1. Preheat oven to 350 degrees. Grease and sugar a bundt pan or 2 7x3 inch loaf pans.
2. Combine banana and sour cream. Set aside. In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time and then stir in the banana mixture. Combine the flour, baking soda, baking powder and salt; stir into the banana mixture. Spread the batter evenly into the pan or pans.
3. Bake for 40-50 minutes in the preheated oven, or until a toothpick inserted in the center of the bread comes out clean.

I know, crazy to put sour cream in the banana bread but it is good. I have never made banana bread but had some bananas that were going bad so I decided to bake with them. The sour cream makes it very moist. I had a slice this morning and now I am going to deliver some to my friends and family.

Okay, when she told me that there was sour cream in this I said "yuck" in my head, but stll smiled at her when she gave it to me. I'm a true friend. :) So I took this "yuck" bread home, and gave it a try. It was so yummy! The sour cream made it very moist and in no way did it taste like sour cream. Job well done my litte Angela-homemaker. Thank You for the breakfast!

I'm Angela's mom and was also a recipient of the banana bread. Lucky me! It was very moist and full of flavor. One thing she did that was new to me was to "sugar" the bundt pan instead of flour it. I love that idea!
